"No Smoke Without Fire" Smoked Pork Loin

“No Smoke without fire” is our version of cured pork Lomo a delicious and popular Spanish cured meat made from the loin of the pig. It is a traditional delicacy in Spain and is known for its intense flavour and tender texture.
To make “No Smoke without Fire”, the loin of the pig, typically, is carefully trimmed and seasoned with a mixture of salt, garlic, and various spices such as paprika, black pepper, and Chilli. Some recipes may also include wine or other flavourings. The seasoned loin is then left to marinate for a period of time, usually a few days, to allow the flavours to penetrate the meat.
