"Loin of Loxley" Pork Loin in Red Wine

The Loin of Loxley is our version of Lounza a type of cured meat that originated in the Mediterranean region, particularly in Corsica, Sardinia, and Cyprus. It is similar to other cured meats like prosciutto or pancetta but has its own unique characteristics.
The loin of Loxley is typically made from pork loin, which is first marinated for 3 weeks in red wine then seasoned with Coriander and crushed mixed Peppercorns. The seasoned pork loin is then air-dried for several weeks or months, allowing it to develop its distinctive flavour and texture.
